Melon purée with Speck and Roquefort croquettes

Ingredients

150 g Speck, sliced
700 g ripe melon
150 g Roquefort
1 egg
100 g all-purpose flour
150 ml water
oil for frying
pepper

With its slight residual sweetness, the youthful Gewürztraminer makes an exciting contrast to the spiciness of the speck and the bitter note of the cheese.

Preparation

Step 1

Peel and seed the melon. Blend half, and cube the other half.

Step 2

For the batter: beat the egg and flour together, add water.

Step 3

Cube the Roquefort, dip in the batter and fry in hot oil. Dry using kitchen paper.

Step 4

To a serving dish add blended melon, followed by melon cubes. Add the sliced Speck and top with Roquefort croquettes.
