The stage is set for our proposals with the Alto Adige signature:
- South Tyrol asparagus panna cotta with South Tyrol speck and cheese cracker: It goes without saying that no Easter menu is complete without asparagus. In this exciting combination as panna cotta with a crispy speck and cheese cracker, you will get to know it in a completely new way. When paired with a glass of fresh and fruity Alto Adige Pinot Blanc, this dish is the perfect opening to any Easter menu. The invigorating acidity and fine fruit finesse of the Pinot Blanc underscore the sweet yet tangy notes of this appetizer.
- Poached egg on polenta cream with baby spinach and potato sticks: It’s just not possible to have more spring on the plate than this. The poached egg, fresh baby spinach, and crunchy shoestring potato sticks rest upon a spicy polenta cream. In combination with the soft fullness of the Alto Adige Chardonnay, which wins over anybody with its broad spectrum of aromas of pineapple, banana, apple, pear, citrus fruits, vanilla, and butter, this dish turns into a taste composition of a very special kind.
- Braised pork cheeks with parsnip puree and carrots: The centerpiece of the Easter menu is formed by juicy local meat with a creamy parsnip puree and glazed carrots. The special flavor of this main dish is best revealed in its interplay with a glass of Alto Adige Pinot Noir. Thanks to its fragrance of red and dark berries, cloves, and violets, it presents itself as elegant and refined. Something for genuine connoisseurs.
- Pan-fried filet of char with South Tyrol apples PGI and horseradish: Fish lovers will be quite pleased with this variation of the main course. The aromatic char, the fresh notes of apple, and the mild spiciness of the horseradish harmonize particularly well with an Alto Adige Val Venosta Riesling. Its invigorating acidity, slight residual sweetness, and refined aromas of peach and citrus fruits make it the perfect counterpart to fish and other seafood.
- South Tyrol yogurt mousse with raspberry jelly: The crowning glory of the Easter menu is this soft, smooth mousse with raspberry jelly. The fruity sweetness paired with the creamy yogurt pair particularly well with the Alto Adige Gewürztraminer, which perfectly accompanies the dessert with its rich bouquet of aromas of roses, cloves, lychee, and tropical fruits.
