Exquisite Alto Adige Wines Meet Traditional Alto Adige Dairy Products

The Christmas holidays are right around the corner! The last minute gifts have been bought, the final errands have been run, and the decorating has diligently been completed. Christmas is a time for family, a time for contemplation, and also time for the grand holiday menus.
Food blogger Stefano Cavada had the idea for a special Christmas menu with Alto Adige dairy products. What is particular about it is that he mixes traditional dishes with modern influences. As an antipasto, there is a smoked salmon and skyr pate with horseradish and rye crackers, with which an Alto Adige Pinot Bianco Riserva is served. It then proceeds with a typical Alto Adige dish: red beet Tyrolean Knödel dumplings with Stelvio or Stilfser PDO Cheese, the taste of which can unfold even better with a Lake Caldaro Auslese. As a main course, he suggests pork roasted in beer with potatoes, chestnuts, and yoghurt rosemary sauce, which goes perfectly with Alto Adige Pinot Noir. The harmonious conclusion to the menu is formed by Alto Adige Spitzbuben jam cookies with butter from Sciaves and Christmas pavlova with a glass of Gewürztraminer Passito.
